Fish fillets battered with coconut flour and lightly fried with coconut oil. This is an excellent dish that couples the health benefits of coconut oil and Omega-3 Fatty acids in fish. Despite frying the fish, the coconut oil will not turn into hydrogenated oil as some other conventional oils do. This coconut fried fish adds a tropical taste to the fillet.

Ingredients
3 tablespoons coconut oil
1/4 cup coconut flour
1/2 cup unsweetened shredded coconut
6 fish fillets
1/4 cup coconut milk
Instructions
Melt the solid coconut oil in a skillet on low-medium heat.
In a separate dish, mix the coconut flour with the shredded coconut.
Dip the fish fillets in the coconut milk.
Coat the fish fillets with the coconut flour and shredded coconut mixture.
Fry the fish fillets on the skillet until golden-brown and flaky.
